For more than eighty years both tourists and Florentines have been coming here to eat. Those who love the flavours of Florence culinary traditions consider Trippa and Lampredotto a mystic experience!
Born from the customary foods of artisans and workmen, tripe and lampredotto, have been a part of the Florentine tradition for almost ten centuries. For those who might not have ever guessed that these parts of the animal could even be eaten, the two most popular dishes are explained.
La trippa or tripe, is the part of the digestive organ found between the esophagus and the stomach. It can be prepared in many ways, even if in Florence it is mainly found doused in a succulent bath of tomatoe sauce. Lampredotto (offal) also comes from the stomach of a bovine, but is more thin and flat. The meat is boiled in a broth of herbs and tomatoes, then finely cut and as a sandwich. Salt and pepper, green sauce and grilled peppers top off this work of art.
Trippa “alla fiorentina”, lampredotto sandwiches, roast pork, “matrice”, crostini toscani, salami and wild boar sausage are some of the tastey platters trippaios offer everyday. The mystic experience is completed according to the tradition by a gass of Tuscan Red Wine.
