What were you expecting the food to be like before you came here? Had you already tasted good Italian cooking in the States? Even so, you will find it it hard to beat here on its home ground! Tuscan cooking has been exported throughout the world and yet Tuscan cooks still manage to create new and imaginative dishes that leave visitors to Italy really regretful when the time comes for them to depart.
Try some traditional Tuscan starters: tasty chicken liver canapes, mixed plates of Tuscan cured hams, fettunta or toasted bread, rubbed with garlic and topped with the best olive oil.
Some delicious first courses include soups of beans or chick peas, spelt and vegetables (ribollita, pappa al pomodoro or zuppa di farro). Pasta dishes served with meat or vegetable sauces (try the pappardelle (ribbon pasta) with hare sauce).
Main courses are usually made up of grilled or roast meats. You must try the famous Florentine steak, thick, rare and crisply grilled. Stews are rarer in Tuscan cooking, but the Florentine tripe is a typical poor man's dish and very popular.
There is a wide choice of seasonal vegetables, as well as the nourishing dried legumes (beans, peas and chick peas). Spinach tossed in oil, roast potatoes with rosemary, mixed batter-fried or grilled vegetables or fresh salads. Note the importance of the local olive oil in Tuscan menus.
To enjoy the best of traditional cooking we advise you to try dining at
ZàZà in Piazza Mercato Centrale, 26-27r (tel. 055.281015). Tourists adore it, Florentines love it and even vips make a point of dining there. This characteristic trattoria also has tables in the historic square that hosts the
Market of San Lorenzo. It is famous for its traditional and typical Florentine cuisine, but also for the wide range of fish dishes and delicious home made desserts.
An excellent dining alternative is NapoLeone in Piazza del Carmine 24 (tel. 055.281015), which also has outdoor tables giving onto the square. It is only open for dinner and serves fresh fish, typical meat dishes and a wide variety of pizzas. The interior offers the atmosphere of an old Parisian cafè.
The O!O Bar con Cucina in Piazza Piattellina 7r, just off Piazza del Carmine (tel. 055.212917), offers biological meals and snacks throughout the day, from delicious morning muffins to typical and creative Mediterranean platters.
Ristorante La Spada in Via della Spada, 62r (tel. 055.218757) is a young fun restaurant with a family atmosphere that is specialised in skewered and grilled meats, especially the famous Florentine steak. It offers all the appeal and flavour of the typical Tuscan cuisine.
Acqua al 2 in Via Vigna Vecchia 40r (tel. 055.284170) is a cheery bistro where art, fashion and good food draw a mixed late-night crowd. Famous for its delicious Med food based on a series of extremely creative platter-served pasta dishes and wide variety of salads.
