Fresh cod in Squill Fish sauce
Ingredients:
800 gr. Fresh cod
1.200 gr. fresh tomato puree passato
2 cloves of garlic
finely chopped parsley
1 chili pepper
1 teaspoonful of sugar
4 squill fish
8 spoonfuls of extra virgin olive oil
salt and flour as required.
Preparation:
Pour the oil into the frying pan and add the finely chopped garlic. Allow to sizzle and then add the pureed tomato, a teaspoonful of sugar, the chili pepper and salt. Toss the fresh cod in the flour, dry well and then fry. Allow to cook for about 3 minutes before tranferring it to the frying pan containing the squill fish and sauce. Cook together to thicken the sauce and serve with the squill fish and the addition of parsley at the very last minute.
