Stuffed Marrow Flowers

Ingredients:
3/4 marrow flowers per person
400 gr ricotta
100 gr peeled shrimps
100 gr Parmesan cheese
2 eggs
Salt & pepper
Chopped basil
Oil for frying
To make the batter:
100 gr plain white flour
1 egg
200 cc pale beer birra
Preparation:
Clean the marrow flowers while also removing the pistils, though taking care not to damage the flowers.
Mix up the ricotta with the shrimps, Parmesan cheese, eggs, salt, pepper and chopped basil and use the mixture to fill the flowers.
Prepare the batter by mixing the flour, egg and beer together.
Dip the flowers in the batter and fry in the hot oil for 2 minutes a side.
Drain them carefully on absorbant paper, season and serve hot.
